BRAZILIAN STORM

Born and raised in Brazil, Daniel was practically built for movement. With a triathlete fatherand a deep-sea diving mother, sports weren’t just encouraged—they were inevitable. From a young age, he wasn’t just playing; he was mastering. Swimming, judo, athletics, jiu-jitsu—you name it, he did it. But football? That was his true love. By 15, he was playing professionally for São Paulo FC, training alongside international superstar Kaká.

But just when his football career was taking off, a devastating injury changed everything. Stepping away from the sport he loved wasn’t easy, but Daniel isn’t the kind of guy who stays down for long. He channeled his competitive fire into creativity, carving out a career in advertising. Working with global powerhouses like Facebook, Louis Vuitton, and Red Bull, he lived in Lisbon, traveled the world, and built a new kind of success.

Yet, no matter how far he went, sports kept calling him back. The pandemic became his turning point—he swapped agency life for sports science and nutrition studies, ready to help others unlock their physical potential. And now, The Brick is where he brings that passion to life. Daniel’s Circus and Strong sessions aren’t just workouts—they’re full-throttle experiences. Expect innovative structures, high-energy coaching, and a team-driven atmosphere that pushes you past your limits. He’s here to make you run faster, lift heavier, and feel stronger—and have a damn good time doing it.

Outside the gym, Daniel is constantly on the move—training for his next sub-3 marathon, uncovering hidden restaurant gems, and curating the perfect playlist. He’ll probably be locked in a silent standoff with his stubborn dog—a daily negotiation of wills.

CRAZY ABOUT MEXICO

Surprise, it wasn’t the last one after all. Serge is back with tacos at La Taqueria this month!

Just back from our trip to Lebanon last month with SUMAC, we are now taking a culinary journey to the beautiful Mexico. This taco hotspot is also located in the South of Antwerp. La Taqueria is all about combining traditional Mexican dishes with other popular central American influences. 

They take a lot of pride in making our own exquisite tacos, with certified organic Mexican corn, gluten free, vegan and without additives. The notion of “sharing is caring” takes another level with their platos. The combos of delicious finger food consist of their famous guacamole, cheesy nachos, chicken quesadillas topped with pico de gallo

Whether it’s the crispy cauliflower fritters, sweet potato fries, or Oaxacan barbacoa, every bite delivers the perfect balance of spice, sweetness, saltiness, tang, and crunch.

We’ve hit the part of the year when I actively start daydreaming summer. As I pull on my fleece sweater and UGG boots, I’m thinking about our Dragon’s Den sun chairs, short sleeves and ice cream. This is starting to show in my cooking. The recipe I’m sharing with you this month combines one of the most iconic winter vegetables with flavors that will transport you to sunnier, warmer locales: kale ‘tabbouleh’ paired with spiced meatballs.

If you (like me) were ever put off by tough, fibrous kale leaves —the eternal chewing, the unpleasant earthy flavor — it might be hard to imagine that a kale salad is going to evoke a bright summer day. Just keep an open mind and you just might turn into a kale aficionado, you can thank me later.

Makes approximately 4 Dragons Den servings or 6 Satori servings

Ingredients

Produce

½ onion

2 garlic cloves

3 tablespoons of lemon juice (from 1 large lemon)

1 shallot

200gr finely chopped kale 

(save yourself a headache and buy a bag of chopped kale instead of chopping it yourself)

2 large tomatoes

large handful of mint leaves

Protein

500 grams of ground beef, chicken, pork or lamb (whatever meat you prefer)

1 egg

Pantry

170gr bulgur

spices of your choice for the meatballs 

(I used turmeric, cinnamon, allspice, dried mint, salt & black pepper)

2 teaspoons of ground cumin

80 ml extra-virgin olive oil

25 grams panko breadcrumbs

salt & pepper

Directions

Step 1: cook the bulgur

Cook bulgur according to package instructions and let cool.

Step 2: make the meatballs

Preheat the oven to 200°C and line a baking sheet with parchment paper. Place the meat in a large bowl and spread it out over the bottom of the bowl. Sprinkle the spices evenly over the meat. Grate the ½ onion and 2 cloves of garlic over the meat. Add the 25gr bread crumbs, the egg and mix well. Wet your hands a little so the meat doesn’t stick and start rolling walnut-sized meatballs. Place them on the baking sheet and bake in the oven until cooked through and slightly browned on top, about 20 min.

Step 3: Prep the tabbouleh

For the dressing: finely chop 1 shallot. Then, in a small bowl, mix the shallot with 3 tablespoons of lemon juice, 2 teaspoons of ground cumin, ½ teaspoon of salt and 80ml olive oil

Then chop the 2 tomatoes & discard the seeds, chop the kale in even smaller pieces (you can skip this step if you’re lazy). Finally tear the mint leaves in smaller pieces.

Step 4: Assemble

In a (very) large bowl, toss together the bulgur, kale, tomatoes & mint. Mix in the dressing. Season with black pepper and taste for additional salt, lemon and/or olive oil. Serve with the meatballs!

Step 5: Enjoy

Notes

Both the tabbouleh & meatballs are perfect to make ahead as meal prep, they will last 3-4 days in the fridge. You can totally customize the tabbouleh by adding your favorite ingredients (i’m thinking cucumber, olives, radish and feta would be amazing) and switch up the spices in the meatballs depending on what you have on hand. Vegetarian version: Omit the meatballs and add a can of chickpeas to the tabbouleh for extra protein or serve with hummus & falafel.
